The onion (Allium Cepa) is a wild vegetable of the Allium family. Since ancient times, onion has been widely used as an edible and medicinal remedy throughout the world. Onion is a great food source, prevents thirst, and is a great source of energy. The unique flavour of onion is the main reason for its spread and popularity. In addition, it grows in conditions of moderate drought and on most soils, which is why it is cultivated in almost all areas of the Indian subcontinent. India is one of the largest producers and consumers of fresh onions.

In order to make the onion last longer, the fresh onion tuber is air-dried and the final product is commonly called dry onion or dried onion. This dried onion is used as an alternative to fresh onion to give an aromatic flavour to cooked and baked dishes. Dried onion also shortens food preparation time and prevents tearing when chopping. Dried onion is also a great source of vitamin C, fibber, and folate. In addition, they provide various minerals such as potassium, magnesium, calcium and phosphorus. The antioxidant and antibacterial properties of onions prevent bacterial infections, flu viruses, and cell damage. Helps with diseases like cancer, diabetes, and heart problems.

The company pays attention to international quality standards when it purchases all products directly from our partners. All products are hermetically packed, so they can be kept longer.

At first, the fresh onion is washed with the hypoglycaemic treatment to reduce the bacteria content before it is processed by the mincer/slicer machine by circulating hot air at 140 °C to 160 °C. Afterward, the dried onion is processed through a container dryer to further reduce moisture content. Finally, it is processed through the air cooling system to bring the temperature to 20 °C. The roots and skin of the onion flakes are removed by an automatic sorter and by a short manual process. To remove unwanted impurities from the end product, minerals are also detected before fresh onions are processed and in various processing steps. Furthermore, metal detection is also carried out before the dry onion sorting process. This sliced dried onion is widely known as dried onion flakes, or simply onion flakes. The general size of onion flakes is 8 to 15 mm in length.

The dried onion flakes are made from white, red, and pink onion raw materials. Among the three types, dehydrated white onion flakes are very popular in the world (mainly in European countries, America, CIS countries, Asia, and Africa in the Middle East) due to their sweet and spicy aromatic taste. The dried flakes can be kept for 2 years at 10-15 °C without appreciable loss of flavour. Colour of the white onion flakes changes from a creamy white to a yellowish-white. Red onion flakes and pink onion flakes are also preferred by many customers because of the lower price compared to white onion flakes.

Chopped dehydrated onions are made from onion flakes, which are primarily used as an ingredient in ready-to-eat products to give the sweet taste of caramelized onions. Chopped onions are also used in vegetable curries or in non-vegetable sauces and fried dishes. It's also used in hamburgers, sandwiches, hot dogs, and pizza for a sharp, aromatic onion flavour.nd consumers of fresh onions.

Due to a specific use, large format dried onion flakes are not suitable for various foods such as grilling or steaming. As a result, some finer substitutes for dried onion flakes are also suggested, namely chopped, chopped, granulated, and powdered. Of all of these varieties, chopped dehydrated onion is made from dried onion flakes. In the initial phase, the sorting process removes unwanted impurities in the form of the outer skin and plant roots. It is then passed through the slicer to make a finer product from the dried onions.

In the last step, the chopped onions are processed through the vibrating table with dimensions of 3 to 5 mm. These last 3 to 5 mm of dried chopped onions are also known as chopped dehydrated onions. Dried onion chop is a more processed form of dried onion flakes, which are made primarily from fresh onion to keep the onion flavouring longer. Fresh onion has been introduced into our foods since ancient times due to its distinctive aromatic flavour and its medicinal benefits in human life. Minced onion is often added as an ingredient in various vegetarian and non-vegetarian dishes to give the onion its pungent aromatic flavours.

Dried minced onion meat is made from dried onion flakes. First, in this process, the roots of the plants and the outer skin of the onion flakes are removed through the sorting process, which improves the quality of the final product. It is then processed by a cutting machine to separate it into smaller pieces. Finally, it is passed through the vibrating table with a size of 1 x 3 mm. These fine 1 to 3mm dried onion particles are also known as minced dried onion.

There are mainly three types of minced onions sourcing by Bhammar Group International. These are based on the colour of the raw onion flakes, such as minced white onion, minced red onion, and minced pink onion. Of these, minced dehydrated white onion is in great demand in European countries and Russia. Some customers also order the red and pink varieties of dried ground beef as a cheaper option. Dried onion granulate is a finer variant of onion flakes, which is mainly used to dress or decorate salads and prepared meals to give the sweet and nutty flavour of the onion. Onion granules are mainly used to enhance the flavour of fruit salads, snacks, momos, and hot fast foods. It is also applied to baked or fried foods and spicy soups to create a pungent aromatic flavour of onions.

Large onion flakes may not be suitable for many foods, such as baked goods and soups. Therefore, some finer alternatives are also offered, such as chopped, granulated, and powdered forms of dried onion flakes. Below these, the onion granules are made from dried onion flakes. Here, unwanted substances such as plant roots and outer skin are separated from the onion flakes through the sorting process.

Therefore, the end product of the dried onion is free from these impurities and of the best possible quality. In the next step, the cutting machine processes it further. Finally, it is processed through the vibrating table of 24-40 mesh, 40-60 mesh and 40-80 mesh. For this, three dehydrated onion grains of different sizes are made, which are separated by meshes of the appropriate size. These onion granules can also be prepared by processing the leftovers or by-products of crushed and chopped dried onions, which in turn are also made from dried onion flakes.
